15-Minute Veggie Soup

15-Min Veggie Soup
2 tsp. olive oil
1 red onion, diced
1 carrot, diced
1 zucchini, diced
1 red bell pepper, diced
3 cloves garlic, minced
4 cups baby spinach, sliced
1 quart vegetable broth
1 tbsp. dried thyme
3 tbsp. tomato paste
2 cups cooked quinoa (or rice, pasta, etc.)
2 cups cooked lentils (or other beans)
salt and pepper to taste

Heat oil in a large stockpot over medium heat.  Add onion and carrot and saute for 5-minutes.  Add red pepper and cook for 3-minutes.  Add zucchini and garlic and saute for 2-minutes.  Add thyme and tomato paste and stir until combined.  Add remaining ingredients.  Bring to a boil, reduce to a simmer and cook for 15-minutes or until vegetables are tender.  Season with salt and pepper.
