Is it a Burrito or a Salad

by Natalie on September 21, 2010

Hey there.  Hope you had a great Tuesday.  My day started out in an overwhelming frenzy and ended with some calmness…how, pray tell, did it happen that way?  I owe it all to the little blackboard message from my professor that read “No class tomorrow night, we’ll adjust the syllabus as necessary”.

I woke up in a panic because I was supposed to have a 10-page lab report due tomorrow evening AND I have a big nutrition exam on Thursday.  In addition to that, my Tuesday and Wednesday were chock full and I had no idea where either writing or studying would fit in.  Unfortunately I didn’t access blackboard until 4pm this afternoon, but it sure made the evening relaxing.  I suddenly gained three more hours tomorrow to study for the test and gained a weekend to work on my report.  HOLLA :)

So, I didn’t meet Lauren for our early morning run.  I had a horrid night’s sleep last night and decided it would be better for me to snooze for an extra hour.  I ended up taking the dog for a 30-minute walk and doing some abs.  I trained a client at the gym, then headed to the rec to coach bootcamp.  As it turns out, I’m glad I didn’t end up running because we did a partner workout at bootcamp and we had an odd number.  I stepped in as a partner and got in a great workout.  Here’s what we did:

*Jogged 1 mile
*50 step-ups, each leg
*25 plank ups and downs, each arm
*40 squats
*40 tricep dips
*25 ball tuck-ins
*25 pushups
*100 jumping jacks
*25 plank high fives
*80 bicycle crunches
*2 full-court suicides

For lunch today, I couldn’t decide on a burrito or a salad.  The verdict.  Combine the two!  This may be one of the easiest and tastiest “recipes” ever.  I swear, it took less than 3 minutes total.  Now that’s fast food.

I simply wrapped an Amy’s frozen burrito in a paper towel and microwaved for 2 minutes.  Meanwhile, I sliced up romaine and spinach.  When the burrito was done, I sliced it into bite-sized pieces, mixed it with the lettuce, and added a few tablespoons of salsa.  It sounds weird.  It tasted great.

Tomorrow morning I am at the lab early for testing, have a (solo :( ) 6-miler planned, and am training a few clients…so I’m headed to bed early tonight!

*TIP TIME*
Get rid of all or nothing thinking.  If you can’t get in a full workout, break it up into mini sessions.  Park farther from work, take the stairs, and take a 10-minute walk.  Every little bit of activity adds up!

Question:  What is the oddest healthy creation you have tried…that you liked?
