I can’t believe it’s almost Monday already, gosh the weekend sure flew by.
Today Colin and I started our day with a workout…and it was HARD!
We don’t usually workout together, but when I told him what I had planned for the day, he requested to join in (I never say “no” to a workout buddy
). We did the fitness test from bodyrock.tv and it kinda kicked our buns. And by kinda, I mean really.
As a warm-up we took the dog on a 25-minute walk/run and when we got back to the house we were ready to go. I set my interval timer for 50:10 and we were off. Here’s what we did:
1. squat jumps
2. pushups
3. burpees
4. high knees
5. jumping lunges
6. tuck jumps
7. crunches
Immediately after we finished our crunches we were out the door for a speedy 2-miler. It was a good, sweaty time!
Post-workout, I whipped up a quick and easy breakfast:
I had a baked sweet potato in the fridge that really needed to be eaten, so I mashed both sides and topped it with two over easy eggs and a sprinkle of sea salt. It was a delicious combo of protein, complex carbs, and fat!
After breakfast I met Lauren for our weekly friend time a long walk. She is about 3-weeks from her due date and we had a blast talking all things babies, workouts, deliveries, etc. I imagine we could have walked another hour (or more!) there was so much to talk about. Luckily, we plan to meet up this week for a treadmill date at some point

Post-walk I headed out to do our grocery shopping for the week and tried my best to stick to my resolution. I have to say, I did pretty darn well. I brought all my reusable bags and produce containers, an old jar to refill peanut butter from bulk, and even asked the fish counter just to wrap our mahi in the paper (not in a plastic bag first). I was proud of myself!
When I got home, I blended up a delicious snack.
Banana Split Protein Smoothie
•1 cup unsweetened coconut milk
•1 scoop vanilla protein powder (I used brown rice)
•1 tbsp. raw cacao powder
•1 tbsp. chia seeds
•1/2 tsp. maca powder
•1/2 frozen banana
•6 large frozen strawberries
Blend all ingredients and enjoy.
This combo was SO good. I haven’t been putting bananas in my smoothies lately and I forgot that they make ‘em so creamy! You’ll be seeing this one again…soon

I spent the rest of the afternoon doing some cooking and getting ready to head over to some friends’ for a turducken feast. Yep, you read that right!
One of Colin’s classmates had a big group of people over in honor of making this dish. If you’re not familiar, it is basically chicken inside duck inside turkey. Kate and Ben specially ordered the poultry from a local farm and spent three days getting all the food ready. Kate’s actually a vegetarian, so there were all sorts of options.
I brought a quinoa salad (recipe to come…it got RAVE reviews!) and enjoyed a small piece of chicken (from the turducken), some vegetable ratatouille (so good!), and some cornbread-sage stuffing. Everything was really delicious.
After dinner we hung around their fire pit and talked before heading home. What a fun night!

*TIP TIME
Throw a few sweet potatoes in the oven at 350° for 40-45 minutes, or until tender. Let them cool completely and then store in the fridge. These can be used as the base of a meal or snack in a pinch!
