Happy Humpday…I hope your Wednesday is treatin’ you well
I happily met my running partner for an early morning run. We did a 50-minute loop and it was the first time in a while that our relatively quick pace felt comfortable. We could chat the whole time, too! Girl time + exercise = perfection.

The only issue was that one of my toenails rubbed the toe next to it and caused quite a scene in my new-ish shoes. Seriously, the cut was like 1/2 cm, but it bled so much!

I came home to a quiet house, sipped on my iced coffee and caught up on some emails/work stuff. We are iced coffee fanatics around here now (thanks 100° weather!) and I look forward to my daily glass each and every morning. Jami turned me on to this recipe and while it is a little time consuming, it is worth it for sure! I make 3/4 the recipe and it lasts us about 10-days. I drink about one cup and Colin usually has two, sometimes black and sometimes with a splash of organic half-and-half. Delish!
After cleaning up, I made an old favorite for breakfast, Protein Pancakes!
Basic Protein Pancakes
•1/2 cup cottage cheese
•1/2 cup oats
•2 egg whites
•1/2 tsp. vanilla
Blend all ingredients. Pour by 1/3 cup measure into a non-stick skillet and cook 5-7 minutes per side or until golden brown. Serve with favorite pancake toppings!
It was just what I needed after a great morning workout.

After packing up my lunch and snacks, I headed to work for the long haul. Tonight was the debut of a new evening TRX class which now on the schedule and means I’ll be at the gym until about 8pm on Wednesdays for a while.
I’ve been on a definite salad kick lately (again, the heat!) and I’ve become pretty quick at throwing them together. Today’s was my usual: greens, beets, carrots, quinoa, garbs, hummus, and avocado. SO filling and SO delicious!
We just took the dog on a walk and are about to relax. Dinner was leftovers, again. Don’t worry, they’re gone so you’ll get to see something new for tomorrow’s dinner

Isn’t this “cooler” running weather lovely? I made this protein pancake today and really liked it! I’ve been making them all summer with basically just egg whites and oatmeal so the cottage cheese is a fun change…and topped with strawberries and a dusting of powdered sugar *almost* tastes like a funnel cake
