Breakfasts Galore

Hey, hey!

I hope you’re having a great weekend.  Mine’s been going by way too quickly!

Backing up a bit…

Friday went by super fast!  I walked Zoey then headed out on a quick 3-miler.  It was the perfect way to start the day :)

I got a bit of work done then taught a boxing class, finished a few more items (payroll day!) and then headed on home.  I had plans to hit up the 5:30pm yoga class, but I took the dog on a leisurely stroll then parked it on the couch.

I’ve become totally addicted to watching Gossip Girl episodes on Netflix.  It’s bad…and I’m totally embarrassed (although, clearly not that embarrassed otherwise I wouldn’t have shared it with you guys ;) ).  It’s definitely a guilty pleasure and clearly I’m way un-cool because it’s like so five-years ago!

Yesterday morning I coached boot camp and it was KILLER.  I’m posting this workout because it was awesome and I plan to do it myself soon.  Try it, you’ll hate me like it!

Boot Camp Workout #2
after a dynamic warm-up, complete each circuit three times doing each exercise for 1:10 the first round, 1:00 the second round, and 30-seconds the third round

1a.  Gym Laps or Stairs (running)
1b.  BOSU Burpees
1c.  Squat Jumps
1d.  Speedbag from Plie Squat
1e.   Hamstring Curls w/ Ball
1f.  Plank w/ Feet Wide

2a.  Gym Laps or Stairs (running)
2b.  BOSU Pushups–blue side down
2c.  Jumping Lunges
2d.  Tricep Dips w/ Hands on Ball
2e.  Wall Sit w/ Arms Out
2f.  Bicycle Crunches

I challenge you to really focus on form the first round, master the move the second round, and BUST IT OUT the last round!

When we got home from boot camp, I grabbed a quick breakfast before heading to CorePower for class.

This is going to sound sort of yuck, but I promise it was delicious!  I had a bunch of “end of the jar” grains in our pantry that needed to be used up, so I popped some brown rice, millet, quinoa, and buckwheat groats into the rice cooker.  With about 15-minutes left, I added fresh blackberries (my current love).  When finished, I drizzled with a little maple syrup, some almond butter, and a sprinkling of hemp seeds for protein.

After class I deep cleaned the house, took the dog for a walk, and Colin and I ventured to the sports bar up the street to watch the Jayhawks play.  We munched on some veggies and hummus while we were there and played a few games of skeeball.  It was glorious!

When we got home, I took a quick little nap then we met our neighbors/friends and another couple for dinner.  We had a blast!  Dinner lasted nearly three hours and the food, atmosphere, and conversation were all fantastic.

This morning Colin and I set out on a lovely 6-miler in absolutely perfect weather.  I ate a banana before we left and it fueled me perfectly for the run.  The sun was shining and I felt so good.

We celebrated pancake Sunday when we got back.

I added some oat bran to the Kodiak Cakes mix I usually use and used almond milk instead of water.  The result?  They came out the best ever!  I will definitely be repeating that.  Colin and I split a grapefruit and some scrambled eggs for protein.  Delish!

I realized as I started blogging that I have only breakfast pictures and I promise some others will be coming your way this week.  Dinner for the first couple of days this week is currently on the stove and I’m hoping it came out well.  Randomly Colin requested Red Beans and Rice (?), so I checked out a few different recipes and just rolled with it.  Hopefully it will be blog worthy :)

*TIP TIME*
Try replacing your usual hot cereal with other whole grains.  Millet, amaranth, quinoa, groats, and rice all make excellent substitutes/additions to oatmeal and will provide some variety to you morning.

that kodiak cake looks perfectly round, how do people perfect their pancakes like that?

One of my favorite TV shows is Buffy the Vampire Slayer. Yes, circa 1996 and on…

I am so far behind on everything it’s not even funny…In fact I watched The West Wing for the first time last year…And that show has been off the air for years ;)

PS I love end of the jar/clean out the fridge meals! They are often the most delicious!
