I hope you had a lovely Sunday.
Mine started off with a chilly 6-miler with Colin. It wasn’t super cold temperature wise (like 30°), but the breeze was icy. Regardless, it was a good run and a fantastic way to start the day.
We grabbed Zoey for a little cool down walk and then headed home for pancakes. I made the usual Kodiak Cakes pancakes for Colin and a flourless version for me. Mine came out fantastic!
Almond Flour Pancake
serves one
·1/2 cup almond flour
·2 egg whites
·1/2 tsp. baking soda
·pinch of salt
·1/2 tsp. vanilla
·1 tbsp. almond milk
Preheat griddle to 350°. In a pyrex measuring cup (or other bowl with spout), combine almond flour, baking soda, and salt. In a small bowl, combine egg whites, vanilla, and almond milk. Add wet to dry and mix well. Pour onto preheated griddle and cook for 5-7 minutes or until bubbles form. Flip and cook for 3-4 additional minutes. Serve with toppings of choice!

I hurried to get ready to head out the door for CorePower class. On an ordinary day I wouldn’t go to a super hard power yoga class after a longer run, but it’s the only time I can make it to this instructor’s class and he’s fantastic! I always leave feeling both exhausted and invigorated.
After cleaning up, I enjoyed my leftovers from last night’s dinner. Colin and I had a great time out last night. We enjoyed a long, leisurely dinner and had a ton to talk about. It was perfect!
We split a salad to start with roasted carrots, parsnips, beets, cipollini onions, and zucchini over arugula and dressed in a blood-orange vinaigrette. It was incredible and something I definitely want to try to recreate at home.
I ordered salmon for dinner and it did not disappoint. Unfortunately (fortunately? ) I was too full to finish it all, so enjoyed leftovers for lunch today:
No words. Seriously, this was the best salmon I’d ever had last night…and tasted just as good leftover!

I spent the rest of the afternoon prepping food for the week and doing some cleaning. The afternoon sure zoomed by.
We’re sort of celebrating Valentine’s week around here (making up for the last 3-years with no Valentine’s Day or anniversary celebrations due to law school/finances) and Colin and I exchanged gifts tonight. We have our cards to give each other on Thursday, but couldn’t wait to do presents. He got me a super nice pair of sunglasses for outdoor adventures–running, hiking, biking–that I love! I couldn’t have picked them out better myself.
I got him a new shirt and tie from J.Crew that look great on him.
I also made him these:
I usually make some sort of healthy “treat” for him to take to work as an afternoon snack. I got festive and used my heart shaped cookie cutter to cut these brown rice krispie treats (minus the coconut and chocolate) into little hearts. They’re pretty darn cute…and I’m sure he’s not embarrassed at all to take ‘em to work

Even in the winter, use sunscreen and eye protection when working out outdoors. Even though it feels cold, the sun is often even stronger than in the summer, so take the same precautions you would then!

Good morning friend! Loved the post – and those cute treats! Project here I come! My long and awesome weekend is finally over – will email soon! I need to try those pancakes! We’ve tried a couple variations over here, and they weren’t super awesome, so still looking for a healthy winner that Eli and Reuben like!

Those rice crispy treats are adorable! Now this year Shane and I are taking a break from celebrating V-day – with gifts, anyway. I got him a box of chocolates!
OK those are the cutest crispy rice squares ever!!! I make a mean crispy rice square sans marshmallow…I might just have to do that this weekend!
