Apple Cinnamon Protein Oats

Apple Cinnamon Protein Oats
•1/4 cup oat bran
•3/4 cup water
•1/2 tsp. cinnamon
•1 tbsp. ground flaxseed
•1/2 tsp. vanilla extract
•1/2 cup unsweetened applesauce
•2 tbsp. peanut flour* or protein powder
•dash of salt
•1 tsp. sweetener to taste

Combine oats and water in a microwavable bowl.  Cook high for 3-minutes.  Stir in cinnamon, vanilla, flax, and applesauce.  Meanwhile, combine peanut flour or protein powder, salt, and a small amount of water until smooth.  Add to oatmeal mixture and stir to combine.

*Peanut Flour is simply defatted peanuts ground into a flour and has a comparable protein content to protein powder with a delicious peanut flavor!  It’s available online or at Trader Joes.
