Balsamic Roasted Vegetables
1 small head of cauliflower, chopped
1/2 medium butternut squash, peeled and chopped
1 small red bell pepper, diced
1 medium Japanese sweet potato, peeled and diced
3/4 large red onion, diced
1 tbsp. olive oil
1 tbsp. balsamic vinegar
1 tbsp. dried thyme
salt and pepper

Preheat oven to 375°.  Toss all ingredients together in a large baking pan.  Roast for 40-45 minutes or until vegetables are tender and brown, stirring every 10-minutes.  Serve warm or cold.
