Blueberry “Pancreplintz”

Blueberry Protein Pancreplintz
·1/2 cup rolled oats
·2 egg whites
·1/2 cup non-fat plain greek yogurt
·1/2 tsp. vanilla extract
·1/2 tsp. ground cinnamon
·1/2 tsp. baking powder
·1/4 cup frozen blueberries

Preheat griddle pan to 350°.  Using a blender or hand blender, combine oats, egg whites, and vanilla until smooth.  Let sit 5-minutes.  Stir in cinnamon and baking powder.  Pour batter onto hot griddle and top with blueberries.  Cook for 4-5 minutes or until bubbles form.  Flip and cook for 2-3 more minutes.  Serve with desired toppings.
