Coconut Laraballs

Coconut Laraballs
makes 2
7 raw almonds
7 raw cashews
1 large pitted date
2 tsp. shredded coconut
1 tsp. coconut oil
pinch salt

Soak almonds and cashews in water for 10-minutes.  Drain and place in food processor (I used a mini one).  Pulse until chopped and there are no large pieces (be careful not to over-chop, you’ll end up with nut butter!).  Add date and pulse until combined.  Add remaining ingredients and pulse to incorporate.  Divide “dough” in half and roll into balls.  Refrigerate until ready to eat.
