Death By Chocolate Cake


Classic Chocolate Cake

2 cups sugar
1 3/4 cups unbleached all-purpose flour
2/3 cup cocoa powder
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
3/4 tsp. salt
2 eggs
1 cup buttermilk
1/2 cup canola oil
1 1/2 tsp. vanilla extract
1 cup boiling water

Preheat oven to 350°F.  Sift flour, cocoa, sugar, baking soda, baking powder, and salt into a large bowl.  In a separate bowl combine eggs, buttermilk, oil, and vanilla.  Pour wet into dry and stir until thoroughly combined and few lumps remain.  Slowly pour in boiling water.  Pour into two 8″ greased cake pans.  Bake 30-35 minutes.  Cool in pans for 15 minutes then turn onto wire racks and cool completely (at least 2 hours).  Frost with chocolate buttercream frosting.

Chocolate Buttercream Frosting
1 stick + 4 tbsp. butter, melted
1 cup cocoa powder
1/2 cup milk
4 1/2 cups powdered sugar
1 tsp. vanilla extract

Combine butter and cocoa powder and whisk until well combined.  Add one cup of powdered sugar and 2 tbsp. milk and whisk until smooth.  Repeat with remaining sugar and milk.  Add more sugar for thicker frosting and more milk for thinner frosting.  Stir in vanilla extract.
