Green Chile Scrambled Eggs

Green Chile Scrambled Eggs
·1 tsp. coconut or canola oil
·3 large organic eggs
·3 large egg whites
·1 small can diced green chiles, drained
·3 tbsp. shredded montery jack cheese
·salt and pepper

Heat oil in a large skillet over medium heat.  Meanwhile, whisk together eggs and egg whites.  Add chiles and cheese.  Pour egg mixture into pan and cook, stirring regularly and scraping with a spatula, until cooked thoroughly.  Season with salt and pepper.
