Pear Breakfast Cobbler
Pear Cobbler
•1/2 cup oats (or whole-wheat flour)
•1 tbsp. ground flaxseed
•1/4 cup unsweetened almond milk
1 pear, diced
1/2 tsp. arrowroot or cornstarch
1/2 tsp. vanilla
1/2 tsp. cinnamon
2/3 cup non-fat plain greek yogurt
Preheat oven to 375°F. Grind oats into a fine flour using a food processor or blender. Combine pear, vanilla, cinnamon, and 1 tbsp. of water in a microwave safe bowl. Cook on high for 2 minutes. Meanwhile, combine oat flour, almond milk, and flaxseed in a large bowl. Add arrowroot to pears and stir to combine. Transfer into an oven safe dish. Spread flour mixture over pears and bake for 12 minutes or until golden brown. Top with yogurt.
