Elisa’s Energy Bars

Elisa’s Energy Bars
(makes 10 bars)
2 cups rolled oats
3/4 cup unsalted peanuts, coarsely chopped
3/4 cup dried fruit, coarsely chopped
2 tbsp. peanut flour or whole-wheat flour
1/4 cup chocolate chips
2 tbsp. ground flaxseed
1/3 cup honey or maple syrup
2 large egg whites
1/2 tsp. vanilla extract
1 tsp. cinnamon

Preheat oven to 300°F.  Line an 8×8 baking pan with foil and cooking spray.  Mix together dry ingredients.  Make a well in the middle and pour in the egg whites, honey, and vanilla.  Stir together until well mixed.  Transfer into prepared pan and press down firmly.  Bake for 30-40 minutes.  Remove from oven and cool completely before cutting into bars.
