Perfect Banana Pancakes

Serves 1 (can be easily doubled)

1/2 cup rolled oats
1/2 cup water
1/2 ripe banana
1/2 tsp cinnamon (to taste)
1/2 tsp baking powder
1/2 tsp vanilla extract
pinch salt

Preheat non-stick griddle to 350*.  Using a hand blender, blend banana, water, oats, and vanilla until smooth.  Stir in salt, cinnamon, and baking powder.  Pour onto non-stick griddle and let cook for 5 minutes or until bubbles form, pancake(s) puff up, and bottom is golden.  Flip and cook for 2 more minutes.

Top with favorite pancake toppings or try my favorite, a thin layer of almond butter and a drizzle of pure maple syrup.  Enjoy!
