Sweet and Spicy Chicken Stew
·1 medium onion, chopped
·2 large carrots, chopped
·1 large sweet potato, cubed
·4 cups baby spinach, chopped
·1 lb. chicken breast, diced
·2 cups vegetable or chicken stock
·2 tbsp. tamari or soy sauce
·2 tbsp. oat bran
·1/2 tsp. cayenne pepper (optional)
·salt and pepper to taste
Combine cornmeal, cayenne, and tamari in crock pot. Add chicken and stir until coated. Add veggies (except spinach) and cover with stock. Cook on high for 6-8 hours or chicken shreds and vegetables are tender. Stir in spinach before serving and season with salt and pepper.
*Lentils or garbanzo beans could easily substitute for the chicken. You may need to add some additional stock or water.
