Turkey and Spinach Sweet Potatoes


Spinach Packed Sweet Potatoes

makes 4 servings
·
4 small sweet potatoes
·1 lb. ground turkey breast (or tofu/veggie crumbles)
·1 medium onion, chopped
·10 oz. baby spinach, chopped
·2 cloves garlic, minced
·1 tsp. olive oil
·3 tbsp. tomato paste
1 tsp. each dried oregano, basil, and crushed red pepper flakes
·salt and pepper to taste

Preheat oven to 400°.  Wash sweet potatoes and prick with a fork several times.  Place in oven, directly on rack, and bake for 35-40 minutes or until tender.  Meanwhile, saute onion in olive oil over medium heat until soft.  Add desired protein and saute until fully cooked.  Add garlic and spices and stir to combine.  Stir in tomato paste, spinach, and 1/4 cup water, reduce heat to low, and let cook for 2-3 minutes.  Remove from heat and season with salt and pepper.  Slice sweet potatoes in half and top with spinach mixture.
