Vegan Peanut Butter Chocolate Chunk Cookies
(makes 10-12 cookies)
·1/2 cup + 2 Tbsp.  Whole Wheat Pastry Flour
·1/2 tsp. Baking Soda
·1/2 tsp. Baking Powder
·1/4 tsp. Salt
·4 tbsp. Earth Balance or Margarine
·1/2 cup Natural Peanut Butter
·1/2 cup Brown Sugar
·1/4 cup Unsweetened Almond or Soy Milk
·3/4 tsp. Vanilla Extract
·1/2 cup Dairy-Free Chocolate Chips

Preheat oven to 350°.  Line baking sheet with parchment paper.  Combine flour, soda, powder, and salt in a medium bowl and mix with a fork.  In a large bowl, cream margarine and sugar until fluffy.  Add peanut butter and beat until combined.  Add vanilla and soy milk.  Cut chocolate into chunks and fold into dough.  Drop by large tbsp onto cookie sheet and bake for 12-14 minutes until set.  Let cool 5-minutes before transfering to a wire rack to cool completely.
