Vegetable Frittata
·3 whole eggs
·5 egg whites
·1.5 cup chopped mushrooms
·1 medium chopped onion
·3 cups chopped baby spinach
·2 tsp. dried basil
·1 tsp. dried thyme
·salt and pepper to taste
·1/2 cup low-fat colby jack cheese

Preheat oven to 400°F.  Saute onion in large skillet over medium heat until soft.  Stir in mushrooms and cook until brown.  Add spinach and spices, turn off heat, and stir until spinach wilts.  Meanwhile, beat eggs and egg whites until well combined.  Stir in 1/4 cup of cheese and vegetable mixture.  Pour into non-stick 8″ round pan and bake for 20-25 minutes or until eggs are completely set.  Remove and let sit 5 minutes before slicing.

Makes 4 servings.
