Vegetarian Nachos

Healthy Nachos

(serves 1)
•2 corn tortillas
•1/2 cup black beans
•1/4 cup shredded cheese
•1/4 small avocado, mashed
•3-4 tbsp. salsa
•olive-oil cooking spray

Preheat oven to 350°.  Spray baking sheet with cooking spray.  Cut tortillas into triangles or strips and spread in a single layer over the baking sheet.  Bake for 10-minutes, flipping once.  Remove from oven and let cool for 3-4 minutes.  Cover baking sheet with foil and top with tortilla triangles, overlapping in spots.  Top with beans and sprinkle with cheese.  Broil for 2-3 minutes or until cheese melts.  Top with avocado and salsa.
