Mochi Fritata
Vegetable Fritata with Mochi
1 whole organic egg
3 organic egg whites
1 cup leftover roasted veggies (onions, red peppers, broccoli)
2 servings of mochi* cut into small cubes
salt and pepper to taste
Preheat broiler. Scramble egg and whites in a small bowl. Pour into non-stick skillet and place over medium heat on the stove. Sprinkle over vegetables and top with mochi. Place under broiler until eggs are set and mochi is melty and chewy. Serve.
